The show doesn't particularly suggest that enchantments are common but I could also see that being another way to go about it. Special booties that let ponies play stringed instruments, for example.

They can play any. Unicorns can use levitation to control the instruments. Earth ponies and pegasi can manipulate the instruments magically, through their hooves somehow.
